Easy, crunchy, and sweet no-bake cookies loaded with peanut butter and crispy cornflakes perfect for a quick treat!
Ingredients:
1 cup granulated sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 tsp vanilla
6 cups corn flakes
Method:
Cook and combine:
In a large saucepan over medium-high heat, combine the sugar, corn syrup, and peanut butter. Stir constantly to prevent burning until the mixture starts to boil.
Mix and coat:
Remove the pan from heat right as the mixture boils. Stir in vanilla , then fold in the corn flakes until every flake is well coated with the peanut butter mixture.
Shape and cool:
Quickly drop spoonfuls of the mixture onto parchment-lined baking sheets using an ice cream scoop. Work fast before the mixture cools and hardens. Let the cookies cool on the parchment paper for 20–30 minutes until set.
