🥔🥩 Hearty Ranch Beef & Garden Veggie Stew 🥔🥩
Ingredients:
1 pound beef stew meat, cut into 1-inch cubes
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups beef broth
1 (1-ounce) package ranch dressing mix
1 pound Yukon gold potatoes, peeled and cubed
1 pound fresh green beans, trimmed
Salt and pepper to taste
Optional: 1/2 teaspoon red pepper flakes (for a little kick!)
Directions:
1️⃣ In a large pot or Dutch oven, heat the olive oil over medium-high heat. Brown the beef cubes on all sides. This creates a delicious depth of flavor!
2️⃣ Add the chopped onion and minced garlic to the pot. Cook until the onion is softened and translucent, about 5 minutes.
3️⃣ Pour in the beef broth and stir in the ranch dressing mix. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 1 hour, or until the beef is tender.
4️⃣ Add the cubed potatoes to the pot. Continue to simmer, covered, for another 15 minutes, or until the potatoes are almost tender.
