Ingredients:
1 ½ cups (180g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (115g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
3 ripe bananas, mashed
½ cup (120ml) sour cream or yogurt
½ cup (60g) chopped nuts (optional)
Instructions:
1️⃣ Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or a 9-inch round cake pan.
2️⃣ Prepare Dry Ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3️⃣ Cream Butter & Sugar:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4️⃣ Mix in Bananas & Dry Ingredients:
Stir in the mashed bananas until well combined.
Gradually add the dry ingredients to the wet mixture, alternating with sour cream or yogurt, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
If using, fold in the chopped nuts.
5️⃣ Bake the Cake:
Pour the batter into the prepared pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
6️⃣ Cool & Serve:
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
