Ingredients:
4 medium potatoes, peeled and grated
1 small onion, grated
2 large eggs
1/4 cup all-purpose flour
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder (optional)
2 tbsp vegetable oil (for frying)
Preparation:
Grate the potatoes and onion. Place them in a clean kitchen towel and squeeze out excess moisture.
In a bowl, combine the grated potatoes, onion, eggs, flour, salt, pepper, and garlic powder. Mix until well combined.
Heat oil in a skillet over medium heat. Scoop about 2 tablespoons of the potato mixture and flatten into a pancake shape in the skillet.
Fry for 3-4 minutes per side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels. Serve hot with sour cream or applesauce.
