🧾 Ingredients
For the cake
• 2 cups all-purpose flour
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• ¾ cup sugar
• ½ cup butter (softened)
• 2 eggs
• 1 tsp vanilla extract
• ¾ cup milk or buttermilk
• 1 cup glacé or maraschino cherries (chopped) 🍒
• ½ cup yellow candied fruit or peaches/apricots (chopped)
• ½ cup raisins or currants (optional)
• ½ cup chopped pecans or walnuts (optional)
For the glaze
• 1 cup powdered sugar
• 2–3 tbsp milk or lemon juice
• ½ tsp vanilla
👩🍳 Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. Mix dry ingredients: flour, baking powder, baking soda, and salt.
3. Cream butter & sugar until light and fluffy.
4. Add eggs one at a time, then mix in vanilla.
5. Alternate flour mixture and milk into the batter.
6. Toss the cherries and fruits in 1 tbsp flour (prevents sinking).
7. Fold fruits into batter gently.
8. Pour into loaf pan and bake 45–55 minutes.
9. Let the cake cool.
10. Drizzle glaze over the top.
