(1) Braised Pork Ribs
Ingredients
* 1 kg pork Ribs, cut into cubes
* 2 tbsp cooking oil
* 6 cloves garlic, minced
* 1 small onion, chopped
* ¼ cup soy sauce
* 2 tbsp oyster sauce
* 3 tbsp brown sugar
* 1 tbsp honey (optional)
* 1 cup water
* 1 tsp black pepper
* 1 tbsp rice vinegar or vinegar
* 1 tsp sesame oil
* Sesame seeds and chopped spring onions for garnish
Instructions
1. Brown the Pork
* Heat oil in a pan.
* Add pork and cook until lightly browned and some fat has rendered.
2. Sauté Aromatics
* Add garlic and onion.
* Cook until fragrant.
3. Make the Sauce
* Add soy sauce, oyster sauce, brown sugar, black pepper, and vinegar.
* Stir until the sugar dissolves.
4. Braise
* Pour in water.
* Cover and simmer over low heat for 45–60 minutes or until the pork is tender.
5. Reduce the Sauce
* Remove the lid and cook until the sauce thickens into a glossy glaze.
* Stir in sesame oil.
6. Serve
* Garnish with sesame seeds and chopped spring onions.
* Serve hot with steamed rice.
(2) Sticky BBQ Pork Ribs
Ingredients
* 1 kg pork ribs, cut into serving pieces
* 1 tsp salt
* 1 tsp black pepper
* 1 tbsp cooking oil
BBQ Glaze
* ½ cup ketchup
* ¼ cup barbecue sauce
* 3 tbsp soy sauce
* 3 tbsp brown sugar
* 2 tbsp honey
* 1 tbsp Worcestershire sauce
* 4 cloves garlic, minced
* 1 tsp paprika
* ½ cup water
Instructions
1. Season the Ribs
* Rub ribs with salt and pepper.
* Let sit for 20–30 minutes.
2. Sear
* Heat oil in a large pan.
* Brown the ribs on all sides.
3. Make the Sauce
* In a bowl, combine ketchup, barbecue sauce, soy sauce, brown sugar, honey, Worcestershire sauce, garlic, paprika, and water.
4. Braise
* Pour the sauce over the ribs.
* Cover and simmer over low heat for 1½–2 hours until tender.
5. Caramelize
* Remove the lid and continue cooking until the sauce thickens and coats the ribs.
* Alternatively, transfer to a baking tray and bake at 200°C (400°F) for 10–15 minutes to develop a sticky glaze.
6. Serve
* Brush with extra sauce before serving.
* Garnish with chopped parsley if desired.
(3) Honey BBQ Pork Ribs
Ingredients
* 1 kg pork ribs
* 1 tsp salt
* 1 tsp black pepper
* 1 tsp paprika
* 1 tbsp cooking oil
Honey BBQ Sauce
* ½ cup barbecue sauce
* ¼ cup ketchup
* 3 tbsp honey
* 2 tbsp brown sugar
* 3 tbsp soy sauce
* 1 tbsp Worcestershire sauce
* 4 cloves garlic, minced
* 1 tbsp apple cider vinegar or vinegar
* ½ cup water
Instructions
1. Prepare the Ribs
* Season ribs with salt, pepper, and paprika.
* Let marinate for 30 minutes.
2. Cook the Ribs
* Place ribs in a pot with enough water to cover.
* Simmer for 45–60 minutes until tender.
* Drain and pat dry.
3. Make the Sauce
* In a saucepan, combine barbecue sauce, ketchup, honey, brown sugar, soy sauce, Worcestershire sauce, garlic, vinegar, and water.
* Simmer for 5–8 minutes until slightly thickened.
4. Glaze the Ribs
* Brush ribs generously with the sauce.
* Bake at 200°C (400°F) for 20–25 minutes, brushing with more sauce halfway through.
5. Caramelize
* Broil or air-fry for 3–5 minutes until the glaze becomes sticky and shiny.
Serving
* Garnish with chopped parsley.
* Serve with rice, fries, mashed potatoes, or coleslaw.
(4) Oven-Baked BBQ Pork Ribs
Ingredients
For the Ribs
* 1.5 kg pork baby back ribs or spare ribs
* 1 tbsp salt
* 1 tsp black pepper
* 1 tsp paprika
* 1 tsp garlic powder
* 1 tsp onion powder
BBQ Sauce
* 1 cup barbecue sauce
* ¼ cup ketchup
* 3 tbsp honey
* 2 tbsp brown sugar
* 2 tbsp soy sauce
* 1 tbsp Worcestershire sauce
* 4 cloves garlic, minced
* 1 tbsp apple cider vinegar
* ½ tsp black pepper
Instructions
1. Season the Ribs
* Remove the membrane from the back of the ribs.
* Mix salt, pepper, paprika, garlic powder, and onion powder.
* Rub evenly over both sides of the ribs.
2. Bake Until Tender
* Wrap ribs tightly in foil.
* Place on a baking tray.
* Bake at 150°C (300°F) for 2½–3 hours until very tender.
3. Make the BBQ Glaze
* Combine barbecue sauce, ketchup, honey, brown sugar, soy sauce, Worcestershire sauce, garlic, vinegar, and pepper in a saucepan.
* Simmer for 5–10 minutes until thick and glossy.
4. Glaze the Ribs
* Remove ribs from the oven and unwrap.
* Brush generously with BBQ glaze.
5. Caramelize
* Increase oven temperature to 220°C (425°F).
* Bake uncovered for 10–15 minutes.
* Brush with more sauce and bake another 5 minutes until sticky and slightly charred.
Serve
* Garnish with chopped parsley.
* Serve with coleslaw, fries, corn on the cob, or steamed rice.
