mini pies


*Ingredients*

*For the Pastry:*  
- 2½ cups all-purpose flour  
- ½ tsp salt  
- ¾ cup cold unsalted butter, cubed  
- ¼ cup cold water (more if needed)  
- 1 egg (for egg wash)

*For the Filling:*  
- 500g minced beef or lamb  
- 1 small onion, finely chopped  
- 1 clove garlic, minced  
- 1 tbsp tomato paste  
- ½ tsp ground black pepper  
- ½ tsp smoked paprika  
- 1 tsp Worcestershire sauce  
- Salt to taste  
- 1 tbsp flour (to thicken)  
- ¼ cup beef stock  
- Fresh parsley (optional)

*Instructions*

1. *Make the pastry*:  
   - Mix flour and salt. Rub in butter until crumbly.  
   - Add cold water gradually to form a dough.  
   - Wrap and chill for 30 mins.

2. *Prepare the filling*:  
   - In a pan, cook onion and garlic until soft.  
   - Add minced meat, brown it.  
   - Stir in tomato paste, seasonings, and flour.  
   - Pour in stock, simmer until thick. Cool completely.

3. *Assemble pies*:
 - Roll pastry and line small greased ramekins or mini
