Ingredients: Olive oil 1 white onion, finely chopped 3 cloves garlic, minced 1 lb wild cod, cut into bite-sized pieces 1 large tomato, diced 1 can coconut milk 2 tablespoons sour cream 2 tablespoons tomato paste 1 red bell pepper, chopped 1 green bell pepper, chopped Sea salt, to taste Black pepper, to taste Red pepper flakes, to taste Fresh cilantro, for garnish Instructions: Sauté the Aromatics: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, cooking for about 3 minutes until fragrant and the onion is translucent. Create the Base: Stir in the diced tomato, coconut milk, sour cream, and tomato paste. Allow the mixture to simmer for an additional 3 minutes, letting the flavors meld together. Add the Veggies and Fish: Toss in the chopped red and green bell peppers along with the cod pieces. Stir gently to combine.
