INGREDIENTS
FOR CHOCOLATE SPONGE
• ½ cup (65g) all-purpose flour
• ¼ cup (25g) cocoa powder
• ½ tsp baking powder
• ¼ tsp baking soda
• Pinch of salt
• 2 eggs
• ¼ cup (60g) sugar
• ¼ cup (60ml) oil
• ¼ cup (60ml) milk
• ½ tsp vanilla extract
FOR CHERRY FILLING
• 1 cup pitted cherries (fresh or canned)
• 2 tbsp sugar
• 1 tbsp water
• ½ tsp lemon juice
FOR WHIPPED CREAM
• 1 cup (200ml) whipping cream
• 2 tbsp powdered sugar
• ½ tsp vanilla extract
FOR DECORATION
• Chocolate shavings
• Whole cherries
METHOD
STEP 1
Preheat oven to 170°C.
Line a small cake tin.
STEP 2
In a bowl, sift flour, cocoa powder, baking powder, baking soda and salt.
STEP 3
In another bowl, beat eggs and sugar until light and fluffy.
Add oil, milk and vanilla extract.
STEP 4
Fold dry ingredients gently.
Do not overmix.
STEP 5
Bake at 170°C for 18–20 minutes.
Cool completely.
Crumble the cake into small pieces.
STEP 6
For cherry filling, cook cherries, sugar, water and lemon juice for 3–4 minutes.
Allow to cool completely.
STEP 7
Whip chilled cream with powdered sugar and vanilla until medium peaks form.
STEP 8
Take serving cups.
Add a layer of chocolate cake crumbs.
Add whipped cream.
Add cherry filling.
Repeat the layers again.
Finish with whipped cream.
STEP 9
Decorate with chocolate shavings and fresh cherries.
Chill for at least 1 hour before serving.
