1️⃣ BLACK FOREST SPONGE CAKE π«
Ingredients:
• Eggs – 4
• Sugar – 1 cup (200 g)
• Cake flour – ¾ cup (95 g)
• Cocoa powder – ¼ cup (25 g)
• Salt – ¼ tsp
• Melted butter – 2 tbsp
• Milk – 2 tbsp
• Vanilla extract – 1 tsp
Method:
1. Preheat oven to 170°C (340°F). Grease and line a cake pan with parchment paper.
2. Sift cake flour, cocoa powder and salt together. Keep aside.
3. Beat eggs and sugar for 7–8 minutes until thick, pale and fluffy.
4. Add vanilla extract and mix gently.
5. Fold dry ingredients slowly into egg mixture.
6. Mix melted butter and milk together, add into batter and fold gently.
7. Pour batter into pan and bake for 30–35 minutes.
8. Cool completely. Decorate with whipped cream, cherries and chocolate shavings for Black Forest style.
2️⃣ RED VELVET SPONGE CAKE ❤️
Ingredients:
• Cake flour – 2 cups (250 g)
• Cocoa powder – 1 tbsp
• Baking powder – 1 tsp
• Salt – ½ tsp
• Sugar – 1 cup (200 g)
• Eggs – 4
• Vegetable oil – ½ cup (120 ml)
• Buttermilk – ½ cup (120 ml)
• Vanilla extract – 1 tsp
• Red food coloring – 1 tbsp
Method:
1. Preheat oven to 170°C and prepare cake pan.
2. Sift flour, cocoa powder, baking powder and salt.
3. Beat eggs and sugar until creamy.
4. Add oil, buttermilk, vanilla extract and red food color. Mix well.
5. Add dry ingredients gradually and fold gently.
6. Pour batter into pan.
7. Bake for 30–35 minutes until soft and fluffy.
8. Cool and serve with cream cheese frosting if desired.
3️⃣ COFFEE SPONGE CAKE ☕
Ingredients:
• Eggs – 4
• Sugar – 1 cup (200 g)
• Cake flour – 1 cup (125 g)
• Instant coffee powder – 2 tbsp
• Hot water – 2 tbsp
• Melted butter – 2 tbsp
• Milk – 2 tbsp
• Vanilla extract – 1 tsp
Method:
1. Mix coffee powder with hot water and keep aside.
2. Beat eggs and sugar until light and fluffy.
3. Add vanilla extract and prepared coffee mixture.
4. Fold in sifted cake flour slowly.
5. Add melted butter and milk mixture.
6. Transfer batter into lined cake pan.
7. Bake at 170°C for 30–35 minutes.
8. Cool completely before slicing.
4️⃣ MOCHA SPONGE CAKE π«☕
Ingredients:
• Eggs – 4
• Sugar – 1 cup (200 g)
• Cake flour – 1 cup (125 g)
• Cocoa powder – 2 tbsp
• Instant coffee powder – 1 tbsp
• Hot water – 2 tbsp
• Melted butter – 2 tbsp
• Milk – 2 tbsp
• Vanilla extract – 1 tsp
Method:
1. Dissolve coffee powder in hot water.
2. Sift flour and cocoa powder together.
3. Whip eggs and sugar until fluffy.
4. Add vanilla and coffee mixture.
5. Slowly fold flour and cocoa mixture.
6. Add butter and milk, mix gently.
7. Pour into cake pan.
8. Bake at 170°C for 30–35 minutes.
9. Cool and decorate with chocolate cream if desired.
5️⃣ LEMON SPONGE CAKE π
Ingredients:
• Eggs – 4
• Sugar – 1 cup (200 g)
• Cake flour – 1 cup (125 g)
• Salt – ¼ tsp
• Lemon juice – 2 tbsp
• Lemon zest – 1 tbsp
• Melted butter – 2 tbsp
• Milk – 2 tbsp
Method:
1. Preheat oven to 170°C.
2. Sift flour and salt together.
3. Beat eggs and sugar until thick and airy.
4. Add lemon juice and lemon zest.
5. Fold flour mixture gently.
6. Add melted butter and milk.
7. Pour batter into prepared pan.
8. Bake for 30–35 minutes.
9. Cool and serve with lemon glaze or cream.
6️⃣ ORANGE SPONGE CAKE π
Ingredients:
• Eggs – 4
• Sugar – 1 cup (200 g)
• Cake flour – 1 cup (125 g)
• Salt – ¼ tsp
• Fresh orange juice – ¼ cup (60 ml)
• Orange zest – 1 tbsp
• Melted butter – 2 tbsp
• Milk – 1 tbsp
Method:
1. Heat oven to 170°C and line cake tin.
2. Beat eggs and sugar until fluffy and pale.
3. Add orange juice and orange zest.
4. Add sifted flour and salt slowly.
5. Fold in melted butter and milk.
6. Transfer batter into cake tin.
7. Bake for 30–35 minutes until golden.
8. Let it cool, slice and enjoy soft orange sponge cake. π
Tips for Soft Sponge Cake:
✔ Use room temperature eggs
✔ Don’t overmix after adding flour
✔ Always sift dry ingredients
✔ Cool cake fully before cutting or decorating
